A Danish take on the Americans' lobster roll. It is an upgraded version of the Danish hotdog, here with soft brioche buns filled with fjord shrimp, mayonnaise, ramson and spring onions.
Enjoy it as is, or do like the Americans and add a handful of salted potato chips on the side.

peeled and cooked fjord shrimp

good mayonnaise

brioche hotdog buns
Salted potato chips for serving

Instructions
Step 1/6
Chop the ramson and set a little aside for garnish. Chop the spring onions finely and squeeze the lemon.
Step 2/6
Mix ramson and spring onions with mayonnaise.
Step 3/6
Set aside about ¼ of the fjord shrimp. Mix the rest into the mayonnaise and season with lemon juice, salt and pepper.
Step 4/6
Warm the hotdog buns in the oven, cut a pocket in them and add the shrimp mixture.
Step 5/6
Place them with the opening facing up and garnish with the remaining fjord shrimp and ramson.
Step 6/6
Enjoy optionally with salted potato chips.
