Million Beef is a simple, but delicious meal that both small and large love. The secret behind a good million beef is a good brown sauce, which the browned ground beef swims around in. Feel free to add a little extra love in the form of a few drops of Worcestershire sauce, a little redcurrant jelly or a teaspoon of gastrique.

ground beef

beef or veal stock

tsp
dried thyme

bay leaves

cornstarch
Food coloring
Optionally Worcestershire sauce, redcurrant jelly or gastrique
Pickled beets
Optionally fresh herbs for garnish, e.g. watercress
Salt and pepper

baking potatoes or potatoes for mashing

Instructions
Million Beef
Step 1/5
Peel and chop the onion, and sauté them in oil in a pot until they are clear.
Step 2/5
Add the ground beef, and brown it over high heat.
Step 3/5
Add stock, thyme and bay leaves to the pot, bring it to a boil, and let it simmer for 15 minutes.
Step 4/5
Thicken with cornstarch stirred out in water, add a few drops of food coloring, and taste if necessary with Worcestershire sauce, redcurrant jelly or gastrique as well as salt and pepper.

Serve with mashed potatoes, pickled beets and optionally fresh herbs.
Mashed Potatoes
Step 1/4
Peel the potatoes, cut them into chunks, and cook them in unsalted water until tender.
Step 2/4
Mash the potatoes with a potato masher or an electric whisk.
Step 3/4
Let the butter melt in the warm mash, and then add milk until the mash has the desired consistency.
Step 4/4
Season to taste with salt.
