The French classic croque madame is delightful for both breakfast and lunch – and as a snack for the late hours. The toasted bread is topped with a filling of béchamel sauce with gruyere, ham and extra cheese, before the whole delicacy is topped with a fried egg. Enjoy it with a good dollop of mustard and optionally a green salad with vinaigrette to provide some contrast to the cheese sauce.

grated gruyere (or other hard cheese)

Instructions
Step 1/8
Toast the bread until crispy.
Step 2/8
Melt the butter in a saucepan, add wheat flour while stirring, and pour in the milk little by little while stirring, so that a béchamel sauce is formed.
Step 3/8
Melt half of the cheese in it, and season with nutmeg, salt and pepper.
Step 4/8
Place the bread on a baking sheet with baking paper. Spread half of the bread with mustard, add a little béchamel sauce on top (approx. 2 tbsp.) and then the ham.
Step 5/8
Place the remaining bread on top, top again with a little béchamel sauce. Finish with a sprinkle of the remaining cheese.
Step 6/8
Place the baking sheet in the oven at 180 degrees fan-assisted/200 degrees conventional oven for approximately 10-15 minutes, until the cheese is golden and melted.
Step 7/8
Meanwhile, fry the eggs in butter, and place them on the finished croque madames.
Step 8/8
Enjoy optionally with a green salad and extra mustard.
